When viewing the census records, I found several men stating that their occupation was "stock dealer" I take that to mean a dealer of cattle or livestock. I have made notations for the men that stated "stock" as opposed to "cattle" just incase I am in error in the understanding of what they meant.

The stock (livestock) or cattle dealer was a man who bought and sold the livestock. At times he acted in his own interests and other times he acted as the middle man between the farmers and the buyers.
